Ihr wisst ja, wie sehr ich Bowls liebe und immer wieder auf der Suche nach neuen Kombinationen bin. Um mal etwas ganz neues auzuprobieren, habe ich mich von der lieben Nina inspirieren lassen und habe eine mexikanische Burrito Bowl gezaubert – Salsa, Avocado und Bowl? Genau meins!
Die Bowl ist wirklich schnell gemacht und schmeckt traumhaft lecker. Gestern nach dem Lauf war sie meine absolute Rettung und ein richtiges Festmahl, voller pflanzlicher Proteine, guter Fette und komplexer Kohlenhydrate. Meine Basis der Bowl bestand aus Quinoa, allerdings könnt ihr die Basis ganz einfach tauschen – Nina hat zum Beispiel Reis als Basis verwendet, was dem klassischen Burrito am nächsten kommt, ihr könnt aber auch Couscous, Bulgur oder Buchweizen verwenden – das liegt ganz bei euch. Je nachdem, ob ihr Couscous oder doch Quinoa nehmt, ist die Bowl in 5-20 Minuten fertig und kann verspeist werden. Natürlich könnt ihr sie euch auch vorbereiten und in die Arbeit/Uni/Schule mitnehmen – denn auch dafür eignet sich das Gericht perfekt.
Burrito Bowl:
- 60 g Quinoa
- 1/2 Dose Kidney Bohnen (ca. 120g)
- 60 g Mais
- 1/2 Avocado
- Salsa- Gewürz (oder Chiliflocken)
- ein paar Blätter Koriander
- etwas Salz
- 1 Schuss Zitronensaft
Den Quinoa waschen und in 3- bis 4-fachen Menge Wasser kochen. Während dem Kochen mit Salsa und Salz würzen und nach 15-20 Minuten das überschüssige Wasser abgießen (bei dieser Variante wird der Quinoa schön lose und locker). Eine Spalte Zitrone ausdrücken, den Koriander hacken und beides unter den Quinoa heben. Avocado würfeln und zusammen mit Kidney Bohnen, Mais und noch etwas gehacktem Koriander auf dem Quinoa verteilen. Kalt oder warm genießen 🙂

Das sieht SO GUT AUS und klingt so toll! Vor allem der Koriander… ein Traum! Nur mein Tipp: Limette statt Zitrone! Passt noch besser!
