Mein Hochleistungsmixer
Ich habe seit einigen Wochen den Vitamix Super Ascent A2300i zu Hause, nachdem ich seit Jahren von einem Vitamix träume. Ein Vitamix ist natürlich ein gewisses Investment, aber die Einsatzmöglichkeiten sind vielfältig und ich bin mir sicher, dass ich jahrelang Freude daran haben werde. Gerade, wenn ich zu Hause mein eigenes Nussmus herstellen kann, bin ich im 7. Foodie-Himmel. Neben Nussmus kann ich mit dem Vitamix auch Nicecream (Banana Ice Cream), Smoothies, Smoothiebowls, Suppen und Dressing mixen. Gerade Shakes und Smoothies werden außergewöhnlich cremig und gesunde Ernährung macht gleich nochmal mehr Spaß.
Mandelmus Basisrezept
Ihr braucht:
- 500g Mandelkerne
- 1 TL Salz
Den Ofen auf 160 Grad Ober- und Unterhitze vorheizen und die Mandelkerne auf dem Backblech verteilen. Für 10-12 Minuten backen und dabei die Kerne im Auge behalten. Sie sollten durch das Rösten leicht bräunlich-glänzend werden, aber auf keinen Fall zu dunkel.
Die Kerne kurz auskühlen lassen und dann in den Hochleistungsmixer einfüllen. Nun ist ein wenig Geduld und Fingerspitzengefühl gefragt. Am besten immer wieder mit der Pulse-Funktion die Kerne zerkleinern, bis der Mixer die Masse zu greifen bekommt und die Öle freigesetzt werden. Ab diesem Zeitpunkt geht es super schnell und innerhalb weniger Minuten habt ihr cremiges Nussmus. Insgesamt dauert das Mixen ungefähr 10-12 Minuten.
Ich wandle meine Nussmusrezepte immer nach Lust und Laune ab, mische verschiedene Nusssorten (Geheimtipp: Mandelmus mit 20% Kokosanteil!) oder verfeinere sie mit Gewürzen. Für das Pumpkin Spice Mandelmus habe ich 1 TL Gewürzmischung (Zimt, Pfeffer, Nelken, Piment, Muskat und Ingwer). Statt der Pumpkin Spice Mischung könnt ihr euch handelsübliches Lebkuchen- oder Spekulatiusgewürz verwenden.
Herbstliche Bowl mit Hanfsamen
- 150g Hokkaido
- 100g Champignons
- 50g Naturreis
- ½ TL Salz
- 1 Feige
- 1 TL Olivenöl
- Gewürze (Paprika, Pfeffer, Knoblauch, Rosmarin)
- 10g geschälte Hanfsamen
- 100g Feta oder Tofuwürfel
- 1 Handvoll Rucola
Dressing:
- 2 TL Sesammus
- 1 TL Senf
- 4 EL Wasser
- 2 EL Balsamico
- 1 Prise Salz
Den Ofen auf 200 Grad vorheizen, den Hokkaido würfelig schneiden und die Champignons halbieren. Mit Olivenöl, etwas Salz und den Gewürzen marinieren und für 20 Minuten im Ofen backen.
Alle Zutaten für das Dressing vermischen und zur Seite stellen.
In der Zwischenzeit den Naturreis nach Packungsanleitung kochen, die Feige in kleine Spalten schneiden und den Feta/Tofu würfelig schneiden.
Die Basis der Bowl bilden Naturreis und Rucola. Das Ofengemüse und die anderen Toppings auf der Bowl verteilen, mit dem Dressing garnieren und zum Schluss mit den Hanfsamen bestreuen.
Tipp: direkt eine größere Menge Dressing im Vitamix blenden und für die Woche vorbereiten. Hält sich im Kühlschrank 3-4 Tage.
